BBQ Flavored Popcorn

1 tablespoon vegetable oil
1/2 cup popcorn kernels
1 stick butter, melted
2 tablespoons your choice Fat Boy BBQ Rub
1/4 cup grated Parmesan
Salt and freshly ground black pepper

Add 1 tablespoon of vegetable oil to bottom of a large pot. Cook over medium heat. When ready add popcorn and cover with a tight fitted lid. Shake the pan while the corn pops to keep it from burning.

Add the popcorn to a large bowl and drizzle with butter. Sprinkle with the Fat Boy BBQ Rub of our choice (we recommend Cowgirl if you want a little heat or try Sweet or Pecan if you want a little sweet), and Parmesan. Season with salt and pepper, to taste, and toss thoroughly.

Chipotle Taco Seasoning

1/2 tsp chili powder
1 Tbsp Fat Boy Chipotle Rub
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cayenne
1 tsp paprika
4 tsp cumin
1 tsp dried oregano
1/4 tsp salt
1 tsp black pepper

Mix all ingredients together. For mild, use 3 tsp, medium, use 4 tsp, and hot, use 5 tsp per 1 lb cooked ground beef or chopped chicken. Add 2/3 cup water to meat and cook until water is cooked off. Serve meat in tacos.

Chipotle Chicken Quesadillas

2-3 Chicken breasts or thighs
Fat Boy Chipotle Rub
4 8″-10″ flour tortillas
Fresh spinach leaves
1 cup sauteed mushrooms
2 cups shredded Monterey Jack cheese (8 ounces)
Salsa (optional)
Guacamole (optional)

Preheat a griddle. Chop and cook meat sprinkled with Fat Boy Chipotle Rub until done. Spoon chicken evenly on one half of each tortilla. Top with spinach and mushrooms. Sprinkle cheese evenly over mushrooms. Fold tortillas in half. Place quesadillas on griddle. Cook over medium heat until brown on both sides and cheese melts. If desired, serve with salsa and guacamole.
