Chipotle Basted Chicken Breast

2 pounds boneless skinless chicken thighs or breasts
1 cup Fat Boy Chipotle Sauce
2 tablespoons cider vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
¼ cup honey
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon ground cumin
¼ teaspoon black pepper

In a blender or food processor combine Fat Boy Chipotle sauce, cider vinegar, brown sugar, Worcestershire sauce, honey, salt, garlic powder, cumin, and black pepper and blend until smooth.

Preheat grill to medium high heat. Salt and pepper the chicken and add to the grill. Baste the chicken generously, turn over after about 2 minutes and baste again. Cook until the chicken is 165 degrees and no longer pink in the center. Baste one last time before serving.

Fat Boy Monterrey Chicken Bake

6 boneless skinless chicken breasts
14 1/2 ounces fire roasted diced tomatoes
4 ounces green chilies
1 cup shredded cheese (mexican blend)
1/2 cup green onions
Heat the oven to 350 degrees. Wash and clean your chicken breasts and then place them in a 9 x 12 glass baking dish. Brush BBQ sauce on chicken. Pour undrained tomatoes over chicken. Add green chilis. Place in the oven and bake for 45 minutes. Remove the chicken from the oven and cover with cheese and green onion tops. Bake for an additional 15 minutes. Allow to cool before serving.

Fat Boy BBQ Party Mix

3 cups toasted rice cereal
3 cups toasted corn cereal
1 1/2 cups bite-size pretzel twists
1 1/2 cups bite-size cheese crackers
3/4 cup honey-roasted peanuts
1/2 cup Haugwaush, Sticky Stuff, Chipotle or Blazin’ Boar sauce
1 tablespoon vegetable oil
3/4 teaspoon onion powder
3/4 teaspoon garlic powder

In large microwavable bowl, mix cereals, pretzels, crackers and peanuts. In medium bowl, mix remaining ingredients until well blended. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 7 minutes, stirring every 2 minutes. Spread on foil or paper towels to cool. Store in airtight container.

Chipotle Sloppy Joes

1 pound ground beef
1/2 cup chopped onion (1 medium)
1/2 cup chopped green pepper
1 8 oz can tomato sauce

2 Tablespoons water
1 to 1 1/2 tsp chili powder
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt
1/2 cup Fat Boy Chipotle BBQ Sauce
Dash bottled hot pepper sauce
6 hamburger buns, split and toasted

In a large skillet cook meat, onion and sweet pepper till meat is brown. Drain off fat. Stir in tomato sauce, water, chili powder, Worcestershire sauce, garlic salt, Fat Boy Chipotle BBQ sauce, and hot pepper sauce. Bring to boiling. Reduce heat. Simmer uncovered, for 5 to 10 minutes or till desired consistency is reached. Serve in buns. Serves six.

Taco Appetizer Platter

1 1/2 lb. ground beef
1/2 cup water
3 Tbsp. Fat Boy Cowgirl Rub
2 – 8 oz. packages cream cheese, softened
1/4 cup milk
1 – 4 oz. can chopped green chilies, drained
2 tomatoes, seeded and chopped
1 cup chopped onions
1 1/2 cups chopped lettuce
3/4 cup Fat Boy Chipotle BBQ Sauce
1 1/2 cups shredded cheddar cheese
Large corn chips or tostados

Brown beef until cooked through and drain. Add water and Cowgirl Rub: simmer for 5 minutes. In a bowl combine cream cheese and milk; spread on a pizza pan or 14″ serving platter. Top with meat mixture. Sprinkle with chilies, tomatoes, onions and lettuce. Drizzle Chipotle Sauce on top. Sprinkle with cheddar cheese. Serve with corn chips or tostados.
